Lotus Rice

An aromatic long grain white rice grown only in selected areas of Downstream Mekong Delta which is characterized by its special fluffiness, tender texture, sweet flavor and natural fragrance. This is the favorable choice of many housewives.

Prepare:

1 cup of Lotus Rice
1 cup of water
1 tbsp. of salt/oil/butter (optional)

Stove Top:

Rinse rice 1 or 2 times till water is clear to remove extra starch.
Bring 250ml (1 cup) of water to a vigorous boil in a saucepan that has a tight fitting lid.
Add 250ml (1 cup) of rice & stir. Salt or butter/oil to taste (Optional Flavors).
Cover the saucepan & reduce heat to a low simmer for 18 minutes until water is absorbed completely.
Remove from heat and steam for 10 minutes. Fluff lightly and serve.

Microwave:

Rinse rice 1 or 2 times till water is clear to remove extra starch.
Place 250ml (1 cup) of water in a large heatproof microwave-safe casserole dish. Bring to boil.
Add 250ml (1 cup) of rice & stir. Salt or butter/oil to taste (Optional Flavors).
Cover, and microwave on high power 5 minutes, then reduce to low for more 10 minutes.
Turn off heat and steam for 5 minutes. Fluff lightly and serve

4 lotus leaves Cut in half
3 cups
Lotus rice
4 Chinese dried black mushrooms
1 Boneless, skinless chicken breast, 6 ounces
1/4 Teaspoon salt
1 Tablespoon Chinese rice wine
1 Teaspoon cornstarch
2 Chinese sausages
1 Clove garlic, peeled and chopped
1 Tablespoon light soy sauce
1 1/2 Teaspoons cornstarch dissolved in 1 tablespoons water
2 Tablespoon vegetable oil for stir-frying
1/4 Teaspoon sesame oil
