Coconut Black Rice Pudding

1 cup Lotus black rice
2 cups Water
1 1/2 cup Homemade, coconut milk
2 tbsp Quality maple syrup

Large pinch salt

Step by step

In a pan, mix water, rice and coconut milk.
Bring to boil and reduce to a simmer cooking so until rice is tender, stirring occasionally.
Add the spring onions and sugar snap peas
Cooking check the rice mixture and add more coconut milk if it gets too dry.
Add sugar, maple syrup and salt and simmer for a few more minutes until the pudding is the right texture.
  Spoon into dishes and top with coconut chips and a splash more coconut milk
