White rice and mixed bean salad

2 cups White Rice
1 cup Green Bean, Cooked
1 Spanish Onion, Sliced
1/2 bunch Parsley, Chopped
1 punnet Cherry Tomatoes, Halved
4 tbsp Extra Vigrin Olive Oil
2 tbsp White Wine Vinegar
1 tsp Whole Grain Mustard

Step by step

Cook White Rice Brown Medium Grain Rice as per pack instructions. Allow to cool.
Place all ingredients in to a large bowl and mix together.
Season to taste with salt and pepper.
Tip: This salad is great served at BBQ or as a healthy lunch.
Variation: Sprinkle with some crumbled fetta cheese.
